Easy & Crispy Cauliflower Pizza

There is nothing quite like a homemade pizza! In fact, it's one of my favorite things. I've really been into replacing bread and potatoes with cauliflower lately and now I prefer the taste. This recipe is super simple and will save you some calories and carbohydrates. It also has a lot of nutritional benefits that a traditional bread crust does not.

you will need

1 head cauliflower, stalk removed

1/2 cup shredded mozzarella

1/4 cup grated Parmesan

1/2 teaspoon dried oregano 

1/2 teaspoon kosher salt 

1/4 teaspoon garlic powder 

2 eggs, lightly beaten 

 

what to do

Preheat your oven to 400 degrees F and line a baking sheet with parchment paper.

Break or chop the cauliflower into florets and pulse in a vitamix until fine. Steam in a steamer or on the stove then pour into a basket and drain well. (you can put it on a paper towel to get all the moisture out) Let cool.

In a bowl, combine cauliflower with mozzarella, Parmesan, oregano, salt, garlic powder and eggs. Transfer to the center of the baking sheet and spread into a circle, to look like a pizza crust. Bake for 20 minutes.

Add desired toppings and bake an additional 10 minutes or to desired crispiness.
