Homemade Junk Food | Oven Popcorn Chicken + Yam Wedges
There is really nothing more satisfying to me that homemade junk food. I grew up in the south and am the literal queen of turning childhood favorites into healthier dishes, I can’t help it. When I started my blog back in 2013, I was already creating these types of recipes for a year on my Instagram channel. I missed southern food but was also in just a healthier place in my life. I remember making one of the first ever cauliflower crust pizzas. It took forever and there was so much trial and error! I don’t have the time I had back then, so I stick pretty closely to convenience these days. But I highly recommend taking a Saturday to make this for your family. I swear its a crowd-pleaser.
My Simple + Delicious Sous Vide Pork Tenderloin
My dad always made amazing pork tenderloin so I’ve been attempting a little of what I picked up from him throughout the years. This recipe is sort of like his, but using the sous vide, of course. You can always roast your pork tenderloin if you don’t have a sous vide. But I’ve been experimenting on bigger meals lately so that one day in the future, when we can have parties again, I can host family and friends!

My Sole Meunière | gluten-free take on a french classic
Sole Meunière needs no introduction. It’s a french classic dish that is always a crowd-pleaser. It can sometimes be a bit intimidating to order at a restaurant and cook at home because the typical french way is to pan-fry a whole sole. This recipe not only simplifies it, but makes it available to everyone, including your gluten-free friends and family.

15 Minute One Pan Moroccan Chicken Recipe | Nutritious + Easy
I was so obsessed with the True Food Moroccan Chicken dish and without having any prior experience cooking anything Moroccan, I decided to give this a try today since I had similar ingredients.
This literally took less than 10 minutes to prepare and the clean up was ONE PAN (and maybe a plate to season the chicken). I know you will love it!!
Must love olives.

Oh fall, you’re so cozy! Fall is definitely my favorite time of the year… The leaves start to change, the air gets fresher and crisper and everything cools down a bit. Attitudes definitely shift for the better with these changes. And even though we don’t get the color changing leaves where I live in Arizona, I still feel the coziness of fall when I’m in the kitchen whipping up something hearty for my family.

Happy Egg Co. Heritage Breed
Feeding my family nutritious food is a no-brainer. I love teaching Nixon about the healthiest and freshest options when it comes to eating! Heritage Breed eggs by Happy Egg are some of the freshest eggs I've ever tasted! But equally important is the sustainability of our foods. Happy Egg thrives under natural conditions and come from several small family farms throughout Missouri and Arkansas.

Salads come in all different shapes, sizes, flavors, and believe me I do not discriminate. But if you think about it, all of the different varieties bring something different to the table, literally. So what makes a salad good?
The answer: so many different things. There are many parts to the equation that I cannot imagine my salad without. I am here to share my all time faves for the perfect at home salad.

Cauliflower Protein Pancakes
This recipe is my way of saying F U to my overwhelming cravings. I can have my cake and eat it too (whatever that means, never understood that... of course I'm going to eat my cake if I have it?). These pancakes are packed FULL of protein, antioxidants, vitamin C, vitamin K, thiamin, riboflavin, niacin, magnesium, phosphorus, fiber, vitamin B6, folate, pantothenic acid, potassium, and manganese. And they are EASY AF to make because I used prepackaged collagen protein and this brand new flourless cauliFLOUR to make them.
